Ierse entrecote met gegrilde radijsjes

Ingredients:

  • 4 (á 200 gr) Irish sirloin steaks, at room temperature
  • 1 bunch of pointed radishes
  • 1 bunch of regular radishes
  • 3 red onions
  • 6 sprigs of thyme
  • 1 garlic clove, finely chopped
  • 2 tbsp olive oil
  • 10 g flat-leaf parsley, finely chopped
  • salt and freshly ground black pepper

You will also need:

  • aluminium foil
  • cast iron skillet (or any other cast iron pan)

WHY IRISH BEEF?
Irish beef steaks are a gift for any dish. Irish cows graze outside for most of the year. All that fresh grass and plenty of exercise makes for tender meat with an intense meaty flavor.

Procedure:

  1. Prepare the BBQ for direct grilling (225ºC)
  2. Remove the foliage from the radishes but leave a piece of green and cut them in half. Cut the onions into wedges. Remove the leaves from 3 sprigs of thyme.
  3. Mix the radish with the onions, thyme leaves and sprigs, garlic and olive oil. Add salt and pepper to taste. Fry the radish and onion in the skillet or another cast iron pan on the BBQ for about 10 minutes until al dente.
  4. Pat the sirloin steaks dry with paper towels and sprinkle with salt. (Pepper after grilling) Grill the sirloin steaks alternately on both sides for about 2 minutes or until they reach a core temperature of 56°C, cover the meat loosely with aluminum foil and let them rest for 3 minutes.
  5. Serve the sirloin steaks with the radishes and sprinkle with parsley.
